Tivoli Gardens: Staying at The Nimb gives you prime backdoor access (literally!) to one of the world’s oldest and most beautiful amusement parks, a place that inspired Walt Disney himself. A visit to Tivoli Gardens is like stepping into a fairytale. As one of the world’s oldest amusement parks – dating back to 1843 – it seamlessly blends nostalgia, whimsy, and modern entertainment all in one. Tivoli isn’t just an amusement park… it’s a lush, beautifully landscaped wonderland. Expect charming pavilions, serene lakes, and vibrant flower gardens, all illuminated by thousands of twinkling lights at night. Tivoli transforms with the seasons, making every visit unique. In the Spring & Summer, Tivoli is bursting with flowers, concerts, and vibrant energy, the park then turns into a spooky wonderland with pumpkins, eerie decorations, and themed rides for Halloween, and rounds out the calendar year around Christmas with a winter wonderland, complete with festive markets, glittering lights, and a magical holiday atmosphere straight out of a snow globe. Nestled right next to the Nimb Hotel, Tivoli is a must-visit for travelers of all ages. The hotel’s concierge can arrange for a backstage tour of the gardens, with access to feeding the incredible variety of fishes in their aquarium (this was a fan fav for my children!), top restaurant reservations within the amusement park and tickets to live concerts and cultural events.

Since the summer of 2021, visitors to Tivoli Gardens have enjoyed the chance to experience some of the world’s most talented chefs at culinary popups at the Japanese Pagoda. Restaurants like the Slovenian Hisa Franko, Danish AOC, Faroese KOKS, German Lafleu, Aska from New York, along with Spanish master chef Paco Morales, holder of three Michelin stars, and one-star Michelin establishments such as Swedish Knystaforsen, Icelandic Dill, and Portuguese Vistas Rui Silvestre, are among the distinguished restaurants and chefs that have provided exceptional culinary experiences during their residencies. The intention is to transform the Japanese Pagoda into a year-round destination where guests can immerse themselves in cultures and cuisines from across the globe, featuring a rotating lineup of star chefs and world-class menus. Tivoli Gardens is more than just an amusement park; it’s a cultural icon that captures the heart of Copenhagen’s charm. Whether you’re looking for gourmet dining, thrills, or a magical evening stroll, Tivoli delivers an unforgettable experience.

Nyhavn & The Canals: Nyhavn is probably one of the most photographed places in Denmark, and for good reason! The vibrant, multicolored buildings lining the canal create a stunning backdrop (social media worthy to say the least!) and whether you’re strolling along the water or enjoying a meal at one of the many outdoor restaurants, the colorful waterfront of Nyhavn is picture perfect! Originally a busy commercial port, Nyhavn was once home to sailors, merchants, and even Hans Christian Andersen (author of The Little Mermaid and many other fairytales), who lived in not one, but three, different houses here. A canal tour offers a scenic perspective of the city’s stunning architecture, and you’ll enjoy a cruise through the city’s scenic waterways, passing historic landmarks and modern architectural gems. If the weather is nice, opt for an uncovered boat for the best views or a sunset or evening tour offers a magical perspective of the city lights. Nyhavn & The Canals are quintessential Copenhagen experiences that blend history, beauty, and relaxation. Whether you’re enjoying ice cream or a cocktail at a charming café by the water, snapping photos of the vibrant facades, or gliding through the canals on a boat tour, this area perfectly captures the soul of the city.

World-Class Dining: Copenhagen is home to some of the world’s best restaurants, including Noma and Geranium (both with 3 Michelin stars!), but even a simple smørrebrød (open-faced sandwich) at a local eatery is a culinary delight. This city is truly a food lover’s paradise, offering everything from world-class dining to cozy neighborhood cafés and innovative street food (a Danish-style gourmet hot dog was a crowd pleaser with my kiddos in Copenhagen). The city’s New Nordic cuisine movement, pioneered by legendary restaurants like the top-rated Noma, has transformed Copenhagen into one of the most intriguing gastronomic destinations. You can expect many restaurants to focus on seasonal, locally sourced ingredients prepared in innovative ways, including foraged herbs, fresh seafood, and unique flavor combinations that highlight the natural bounty of Scandinavia. Whether you’re indulging in a once-in-a-lifetime tasting menu, enjoying a laid-back meal by the canals, participating in a cooking class (which The Nimb hotel can easily arrange for you… one of our most enjoyable experiences during our visit), or savoring a perfectly crafted pastry, every meal here is an experience worth savoring.

Design & Culture: Copenhagen is considered a global capital of design, where Scandinavian minimalism meets bold creativity. Whether you’re exploring sleek boutiques, cutting-edge furniture stores, or charming independent shops, the city’s commitment to aesthetics and craftsmanship is evident at every turn. Danish design is known for its clean lines, functionality, and timeless elegance, blending beauty with practicality. A visit to Copenhagen wouldn’t be complete without a stroll on Strøget, one of Europe’s longest pedestrian shopping streets, lined with everything from high-end brands (Louis Vuitton, Chanel, and Prada) to Danish fashion staples like Ganni and Samsøe Samsøe. Forget tacky tourist souvenirs – Copenhagen offers high-quality, stylish keepsakes and a shopping experience that is as chic as the city itself.
Cycling-Friendly City: Rent a bike and experience Copenhagen like a local, riding along the harbor, through charming neighborhoods, and past historic landmarks with ease. Many of Copenhagen’s top attractions – Nyhavn, The Little Mermaid statue, The Royal Palace (seeing the changing of the guards march throughout the city was a core memory for our family!), and the Tivoli Gardens – are easily accessible by bike. Copenhagen is one of the most bike-friendly cities in the world, with a well-designed infrastructure that makes cycling safe, easy, and enjoyable. In fact, most of the city’s population commutes by bike daily, and visitors quickly discover that two wheels are the best way to see the city like a local (our wheels consisted of a double baby stroller, which was also very easy to get around with).

Hygge & Hospitality: The Danish concept of hygge – a feeling of coziness and contentment – is alive in every candlelit cafe, warm conversation, and inviting space throughout the city. The Nimb Hotel is a perfect example of hygge in luxury form, with its intimate atmosphere, fireplace-lit lounges, and beautifully designed rooms. Another highlight from our time in this cozy city was a memorable meal at Vækst, a plant-filled eatery, embracing hygge with natural light, hanging greenery, and a greenhouse-like setting, serving fresh, modern Nordic cuisine. Despite its refined dishes, Vækst maintains a relaxed and welcoming atmosphere, making it perfect for an intimate dinner (where I happened to celebrate my birthday!) or a casual yet elegant meal. Whether it’s a warm dining experience at a local bistro or a glistening evening at Tivoli Gardens, Copenhagen’s hospitality scene revolves around fostering connection and warmth.
